Chandler nights

The Chandler variety is the most flavored nut  classic. It has the peculiarity of having an elongated shape and a thin shell, which can be easily opened by hand. The kernel has a very light color and when broken it occurs in means.

👉For the cultivation of walnuts the producer follows the integrated pest management regulations of the Veneto Region (not the organic regime). This provides for a reduced and very controlled use of plant protection products combined with a series of more natural techniques, products named in the specification and regulated for use.

👉 They use a monitoring system that allows them to intervene only when and where necessary, in this way they are able to further limit the use of pesticides, they are part of the integrated pest management but only use a part of what is allowed from the specification, a positive confirmation of this is the large amount of ladybugs and bees that they have in the walnut grove. :)

Candied Green Walnuts

The still green walnut is candied in sugar and then packaged cut into quarters in its candying liquid.

The strongly tannic aroma of green walnut is attenuated by candying and by adding a little vanilla. Kernels in syrup

With a view to enhancing green walnut, this product combines dry walnut and green walnut. The kernels, the shelled walnuts, are immersed in the candying syrup of the green walnuts, soften and acquire that fresh flavor typical of the green walnut. The result obtained is a product to be consumed as it is as a dessert or in combination with a soft cheese such as a robiola. The sweet and slightly sour taste of the cheese goes well with the kernel which in its sweet syrup has acquired the tannic flavor of green walnut.
